What can be more refreshing than a frosty, bright popsicle? They’re an almost ubiquitous part of summer, and they are a truly revitalizing nutritious sweet treat that can be enjoyed at any time. What if you could have the creamy, sweet treat of a delicious popsicle while getting in a nutritious dose of veggies, too? It sounds too good to be true, but this recipe does exactly that!

 

This is an excellent, creative way to get kids to eat their greens, and it is also a fun, easy recipe that kids will enjoy helping you make. This family-friendly treat combines nutrient-packed kale (one of the most nutritious greens in the world) with creamy avocado and some sweet fruits to balance out the flavor.

the great health benefits, too!) while getting the delicious, refreshing texture of a creamsicle. Kale and
avocado both lend their green hue to this delicious treat, and the avocado gives it a creaminess that is
truly divine. The healthy fats in the avocado also help you absorb the nutrients in the kale, so they’re
truly a match that’s meant to be together.

 

It only takes about 10 minutes to blend these ingredients together and toss them in the freezer, and
you’ll have snacks for days or even weeks!

They are pretty inexpensive (I got one for about nine bucks), and they help ensure that you don’t waste any of the yummy blended fruit and veggies, so they really pay for themselves if you use them regularly. It also allows you to make popsicles a regular part of your food prep routine, getting you in the habit of making a nutritious snack to have on hand. If you’re not into kale, you can also consider blending up other things like a simple banana ice cream and throwing it into the molds. The only limit is your creativity!

The only tricky part is making sure that the ingredients are blended well enough that you don’t get chunks of kale in the middle of your popsicle. Make up a batch of these delicious Green Smoothie Creamsicle Popsicles and have a delicious, healthy, frosty treat that the whole family will enjoy!

 

INGREDIENTS

  • 1 apple sliced and cored
  • 1/2 of an avocado (ripe)
  • 2 bananas (ripe with brown spots)
  • 1 cup kale (2 cups if you don’t mind the flavor)
  • ½ lemon (juiced without skin)
  • 2 cups water

 

 

DIRECTIONS

 

  • Throw all the ingredients into a blender and blend for 45 seconds to 2 minutes until everything is completely smooth.
  • Pour into popsicle mold and let freeze overnight.
  • Will make around 6-12 popsicles depending on the size of your popsicle kit.
  • Feel free to drink any remaining smoothie!
